1) Probably not, but why would you need a heatsink on it if you're putting it in a heatsink enclosure? 2) This enclosure has issues inherent to the design which causes communication errors, I'd recommend getting something else.

Q: Does it work as enclosure for a MacBook Pro retina 15” 2012 ssd? (7+17 pin connector)

No it is only compatible with M.2 PCIe NVMe SSD's.

Q: as its clicked closed, anyone have any issues with the enclosure opening unexpectedly?

The Sabrent USB C inclosure that I have has been fine. I have not used it that much so I do not know of continued use. I have found that the clip that holds the M.2 Drive is awkward to get into place to hold down the drive. The inclosure seems well made I do not see that there should be a problem.
